Eat at Jo's

Well, you can't really eat at Jo's, but those recipes she posts make you wish you could. Jo Wake was kind enough to mention Precious Atonement on her blog today. As a special treat, she's including a recipe for a dish that was mentioned in the book. I hope you'll pay her a visit. :) In other news... Cherry Dump Dessert

(Were those cheers or boos I heard? ...maybe a mixture of both. o_0)  I'm launching another pre-written post to let you know I'm still around, and to give you a heads-up.  The fun and talented Carol Kilgore will be visiting Monday with a guest post. You won't want to miss it. ;) Today, I'm letting you in on an easy-but-yummy recipe the whole family loves.  *I* love it because everything but the butter is shelf stable, making this a recipe I can throw together on short notice. Oatmeal Raisin Cookies

I'm still on hiatus, busy drafting and polishing my WIP, but I'm posting a recipe today so you'll know I'm still a live ( and to prove I do cook from scratch sometimes. LOL ).  Today I'm sharing one of my most coveted recipes. My mom found this cookie recipe in our local paper many years ago. We tweaked it a little, and it became a favorite.  I'm going to post two sets of ingredients. You can choose which one to follow , according to how big a batch you want to make.

Bubble Pizza

In the interest of varying blog content, I thought I’d post another recipe this month—my version of Bubble Pizza. It’s a dish the entire family loves and it’s easy to make. In fact, if you sauté the meat ahead of time, it can be a one-dish meal. What you’ll need: 2 cans of refrigerated dough (I like Pillsbury’s French or Italian bread) 1 jar pizza sauce 1 to 1 ½ lbs. ground beef ½ an onion, chopped Salt & pepper 1 to 2 Tbsp. sugar (optional) 2 to 3 cups shredded cheese of choice Skillet 13 x 9 casserole dish  Non-stick cooking spray How to prepare:

Chicken & Dumplings

Yep. You read right. And, no, it's not a play on words. Today I'm posting a recipe for Chicken & Dumplings — a good, hot meal for a cold day. This feeds a family of 4 to 6. What you'll need: A rotisserie chicken from the local market (cooked) 2 cans of cheap, plain refrigerator biscuits (more if they're small) A large soup or spaghetti pot with lid (mine's an 8-qt) Water Salt & Pepper Hint: I like to buy my chicken in the afternoon and let it sit out and cool a bit before I prepare supper, but you can refrigerate overnight if needed. Directions: Fill your soup pot about 1/2 full with water and set to boil. While you're waiting for that to heat, remove all usable meat from chicken, break into bite-size pieces, and set aside in a bowl.
